  1. Roasted Chicken Marinade:

    I love baking a whole chicken to have plenty of chicken for the week to put on salads or in bowls or to make a sandwich with. The lemon makes the chicken taste extra fresh and the Chamomile makes it taste earthy and comforting. 

 

Lemon Chamomile Roast Chicken

 

Ingredients: 

1 whole chicken (about 4-5 pounds)

2 tablespoons dried chamomile flowers or two tea bags brewed 

Zest of 1 lemon

Juice of 1 lemon

2 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

Fresh herbs for garnish (optional)

 

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, combine dried chamomile flowers or 1 cup brewed chamomile tea, lemon zest, lemon juice, minced garlic, olive oil, salt, and pepper to create the marinade.
  3. Pat the chicken dry with paper towels and place it in a roasting pan.
  4. Rub the marinade all over the chicken, making sure to coat it evenly.
  5. If desired, stuff the cavity of the chicken with fresh herbs such as thyme, rosemary, or sage for extra flavor.
  6. Roast the chicken in the preheated oven for 1 to 1 1/2 hours, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown and crispy.
  7. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  8. Garnish with fresh herbs, if desired, and serve this aromatic lemon chamomile roast chicken with your favorite sides for a comforting and flavorful meal.

 

  1. Tea Infused Rice:

    The Jasmine Green tea gives the rice a floral and earthy taste transforming all your meals with a rice base. 

 

Jasmine Green Tea Infused Rice

 

Ingredients:

1 cup jasmine rice

1 3/4 cups water

2 bags jasmine green tea

Salt to taste

Optional: chopped green onions or cilantro for garnish

 

Instructions:

  1. In a saucepan, bring water to a boil. Once boiling, remove from heat and add the jasmine green tea bags. Allow the tea bags to steep for 3-5 minutes.
  2. Remove the tea bags and return the tea-infused water to a boil.
  3. Rinse the dry jasmine rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming too sticky.
  4. Add the rinsed rice to the boiling tea-infused water. Stir briefly, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
  5. Once the rice is cooked, fluff it with a fork and season with salt to taste.
  6. Serve the jasmine green tea-infused rice as a side dish alongside your favorite main course. Garnish with chopped green onions or cilantro for an extra burst of flavor.
